Glaze Standards

 

Media reports in China suggest that although there is a new standard for glazed shrimp—no more than a 20% glaze—the standard is routinely violated, and many markets sell frozen shrimp with a 40% glaze.  The new standard was supposed to take effect on August 1, 2013, but a reporter visiting a seafood market in Bohai found it was largely ignored.
